Sweet Potato Curry!

(Serves 4)

Ingredients

1 tablespoon of olive oil
1 small onion
2 tablespoons of hot curry paste (I used Jalfrezi)
1cm of fresh ginger, peeled and grated
1 red chilli, chopped (de-seed for less spice)
100g of red lentils
1 and a half sweet potatoes, peeled and cubed
2 tomatoes, peeled and cubed
1 pint of vegetable stock
150g of plain low fat yogurt
2 teaspoons of fresh coriander, chopped

Method

-Peel and chop ingredients ready for use. To peel the tomatoes, cover them in boiling water for 3-4 minutes, drain and cover with cold water, drain and peel.
-Measure the oil into a thick-based saucepan and heat.
-Add the onion, ginger, chilli and curry paste and cook over a medium heat for 4 minutes. Continue to stir for this time.
-Now add the lentils, sweet potatoes, tomatoes and stock. Stir and bring to the boil.
-Reduce the heat, cover and simmer for 30 minutes
-With 10 minutes remaining, put your rice on to cook.
-Stir in the yoghurt and coriander, remove from heat and serve.
