Bacon Hotpot!

(Serves 4)
Approximate Cost per Serving = £2.09
 

Ingredients
 
One onion
4 - 6 large potatoes
8 - 10 bacon rashers
cheese (optional)
1 pint milk
2 oz flour
2 oz butter
seasoning
 
Method
 
- Preheat the oven to 205C
- Peel and slice the potatoes
- Peel and dice the onion
- Slice the bacon rashers
- Grease a casserole dish
- Start with a layer of potatoes, then add some onion, then bacon, then onion, then top with potatoes. (repeat the layers if necessary)
- Make the white sauce and pour over
- Cover and bake for 1 hour
- Then uncover and baker for a further 40 minutes at 150C
- Grate cheese on top (optional)
 - Bake for 20 further minutes at 150C
-Serve
 



White Sauce!

A white sauce is needed for many dishes, such as casseroles or hotpots or anything else.

 
Ingredients
(amounts may vary in dishes)
 
- Butter
- Plain flour
- Milk
 
Method
 
- Melt the butter in a pan
- Add the flour and stir
- Gradually add the milk, stirring continuously.

Sweet Potato Curry!

(Serves 4)
Approximate cost per serving = £1.80

Ingredients

1 tablespoon of olive oil
1 small onion
2 tablespoons of hot curry paste (I used Jalfrezi)
1cm of fresh ginger, peeled and grated
1 red chilli, chopped (de-seed for less spice)
100g of red lentils
1 and a half sweet potatoes, peeled and cubed
2 tomatoes, peeled and cubed
1 pint of vegetable stock
150g of plain low fat yogurt
2 teaspoons of fresh coriander, chopped

Method

-Peel and chop ingredients ready for use. To peel the tomatoes, cover them in boiling water for 3-4 minutes, drain and cover with cold water, drain and peel.
-Measure the oil into a thick-based saucepan and heat.
-Add the onion, ginger, chilli and curry paste and cook over a medium heat for 4 minutes. Continue to stir for this time.
-Now add the lentils, sweet potatoes, tomatoes and stock. Stir and bring to the boil.
-Reduce the heat, cover and simmer for 30 minutes
-With 10 minutes remaining, put your rice on to cook.
-Stir in the yoghurt and coriander, remove from heat and serve.

Sausage and Bean Hotpot

(Serves 3/4)
Approximate cost per serving: £1.36



Ingredients

- 8 Sausages
- 3 Carrots, chopped
- 400g tin of Baked Beans
- 400g tin of Chopped Tomatoes
- 1 Pepper, chopped
- Thyme
- Paprika
To Serve
- 2 Baguettes or
- 4 large potatoes

Method

- Heat a splash of oil in a large/sauté pan.
- Chop the sausages into 3 evenly sized pieces and cook on a low heat.
- Meanwhile, sieve the beans to remove the majority of the juice.
- Once browned, add the carrots and pepper.
- When softened pour the chopped tomatoes and the beans into the pan and stir.
- Add a sprinkle of Thyme and Paprika, and season to taste.
- Bring to a simmer and leave for 5 minutes
- To serve, either mash the potatoes or butter the baguette.

Jacket, Bacon & Cheese

(Serves 1)
Approximate Cost: £2.75

 

Ingredients

-1 large baking potato
-3-5 rashers of bacon (depending on the size)
-50g cheddar cheese

Method
- Preheat the Grill, to approximately 200'C
- Wash your potato and place in a microwaveable dish
- Cover the dish with cling film, leaving a gap for air
- Place in the microwave for 5 minutes
- Place the bacon under the grill & prepare your cheese
- After the 5 minutes, hold back cling film and turn the potato over, cook for a further 5 minutes
- Turn the bacon over and remove any excess fat
- Place the potato on a plate, butte
- Cut the bacon into small pieces and place them in and around the potato
- Sprinkle with the cheese and place in the microwave for 1 minutes
- Serve

Chicken Biryani

(Serves 4)
Approximate cost per serving: £2.55


Ingredients
 
2 tablespoon vegtable oil
3 chicken breast fillets, diced
1 large onion, finely sliced
3 tbsp curry powder (more if you like)
350g easy cook long-grain rice
700ml chicken/vegtable stock
250g frozen peas
 
Method
 
-Preheat the oven to 200'C
-Heat the oven in a large sauté pan and fry the chicken pieces, for 5-10 minutes / until browned.
-Tip in the onion and continue to fry for 5 minutes.
-Sprinkle in the curry powder and cook for a further minute.
-Stir in the rice and pour over the stock.
-Bring to the boil.
-Cover the pan (we used tin foil) and bake for 30 minutes.
-Cook the peas, in a pan or microwave, and stir them in.
-Serve

Quick Meatball Casserole

(Serves 4)
Approximate cost per serving: £2.10

 
Ingredients

500g Turkey mince
2 large onions
450g large carrots, cut into chunks
450g Potatoes, peeled and cut into chunks
1 garlic clove
500g jar of passata
1 table spoon olive oil
1 table spoon of paprika
Small bunch of parsley, chopped

Method

- Mix the turkey mince with half the chopped parsley, season with salt and pepper to taste
- Shape the mince into 12 balls and heat the oil in a non stick pan. Fry the balls for 4-5 minutes, shaking occasionally so the meatballs are browned all over.
- Add the chopped onions, garlic, carrots, potatoes and 300ml of water to the pan.
- Bring to the boil, cover and simmer for 15 minutes.
- Stir in the paprika, passata and half the remaining parsley. Bring to the boil, cover and cook for a further 10-15 minutes, or until the potatoes and carrots are tender.
- Season to taste and sprinkle with the remaining parsley to serve.
